Quarantine Baking… Preacher Cake?!

They say memory is a funny thing. Sometimes I think I only remember something because I’ve heard the story told many times, not because I actually remember it. However, this memory seems to be true, and it is from 25-26 years ago. Maybe?! The year and date are definitely not part of what I remember! Ha

I have been getting fresh fruit and vegetables each week and my family eats a lot of it! However, I think I’m the only one eating the pineapple and it goes bad quick! So, I was thinking I really want a cake for the week but can I find the recipe I’m thinking of? I remembered a woman from my childhood church used to bring it any time we had a potluck….but she really brought it because of a previous preacher. She called it preacher cake!

Apparently, what I’ve been told, Preacher Cake received the title because it was a dessert you probably had the ingredients for sitting idly in your pantry…so if preacher told you he was stopping by, you could throw it in the oven while you cleaned the house up! Is this what you know? Never heard of preacher cake? Remember it well? I want to know!

So, what do you need?

  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 2 cups sugar
  • 3 eggs
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract (maybe a little more)
  • 1 20-ounce can crushed pineapple, with juice (you know I make it with fresh, but you can use a can)
  • 1 1/2 cups finely chopped pecans or walnuts, divided (optional) (yes, definitely left out!)
  • 1 cup flaked coconut (optional) (blahhck! Definitely left out)

Preheat your oven to 350°, then mix your wet ingredients, mix your dry ingredients, then combine them. Bake in a 9×13 or bigger dish for 40-55 minutes! It should have a dark brown top when you pull it out!

Just kidding… it took 31 minutes in my oven. Anymore and it would have burned.

Icing?! Oh yes!

  • 1 8-ounce package cream cheese, at room temperature
  • 1/2 cup (1 stick) butter, at room temperature
  • 1 teaspoon vanilla extract
  • 2 cups powdered sugar, sifted

If you don’t have the cream cheese but you do have a can of cream cheese frosting pop it in the microwave then combine it with the above ingredients.

Now I understand why she told me it would puddle.
